Hericium erinaceus (Hericium erinaceus, lion's mane, sheep's head, yamabushitake) is a species of mushroom belonging to the Hericiaceae family. It occurs naturally in Asian countries.

Hericum is a source of biologically active substances such as beta-glucan.

Beta-glucan is a non-starch polysaccharide composed of D-glucopyranose residues. This D-glucose polymer takes the form of a three-dimensional, long-chain molecule. Depending on its origin, it can be composed of the following bonds: β-(1,3-), β-(1,4-) and β-(1,6-). It is a soluble fraction of dietary fiber and occurs naturally in the cell walls of various plants.
