UMF ^® – an independent certification system

Happy Valley is a proud member of the independent association UMFHA, which awards the UMF ( Unique Manuka Factor ) certificate. The UMFHA organization classifies the biological activity of Manuka honey by issuing a corresponding certificate.

UMF certification is determined by test results of four key ingredients:

• leptosperin: an ingredient found only in honey derived from the nectar of the Manuka bush,
• MGO Methylglyoxal (MG): the level of methylglyoxal is responsible for the properties of honey,
• DHA (Dihydroxyacetone): a substance that determines the age of honey, from which methylglyoxal is formed under the influence of various processes,
• HMF (Hydroxymethylfurfural): determines the amount of product formed in the decomposition process of fructose present in honey under the influence of temperature (a result above 40 mg/kg indicates that the honey has been overheated).
